Dear Internets

This coming weekend is Thanksgiving weekend. I am attempting to make the whole turkey-stuffing-(mashed)potatoes-she-bang. And this is going to be the first time I have ever attempted something like this! So, any tips, recipes, catering companies you can suggest I would greatly appreciate. Because the last thing I want is to burn down an apartment building on Thanksgiving. It could take away from people being thankful.

This is not a specific tip, but just a vote of confidence. I was scared out of my mind the first time I was responsible for a big holiday meal, but the secret is that it's not really that hard. It seems hard, but it actually isn't. Once you do it the first time, you realize that it can be done.

Okay, specific tips are now jumping into my head:

1) Cook the bird "upside down" (i.e., breast down). My uncle who was a trained chef taught me this and it made the meat super moist.

2) Get help! Enlist others to help you prep veggies, set the table, bring appetizers and dessert, so you just have to think about the main meal.

3) Buy a meat thermometer and stick the probe into the thickest part of the thigh (without touching the bone). I have one that beeps when it comes to temperature (the exact temp is escaping me right now, but can be easily googled). This way you never have to guess if its done or whether you'll kill someone with salmonella.

3) Watch Pieces of April-it won't help you cook the meal, but it's an entertaining movie about a young woman cooking Thanksgiving for her obnoxious family. It may help you feel better about your family, and your ability to make the dinner!

We aren't having turkey (cuz we eat it so much during the year!) but I have no idea what we're going to cook instead!!
